One of the hidden secrets in the world of “non-professional cooking” is the carbon steel skillet. Pros have known about it for quite some time, but consumers have not. Only recently has the carbon steel skillet been getting the respect it deserves.
In practice, Carbon Steel performs much like Cast Iron. However, it is lighter, more practical, and EXTREMELY nonstick once seasoned.
